Lesi Lambert, Master Cake Designer
Lesi Lambert is a true sugar artist and loves sugar craft.
She’s won numerous awards for her artistic cake creations, taught classes and serviced both private and corporate clients. Lesi has been creating great tasting; visually inspiring edible works of art since 2005. Her largest custom sculpted cake was for a corporate Stampede party and fed over 1000 people.
Lesi Lambert has studied sugar arts with Nicholas Lodge, James Rouselle, Becky Rink, Lourdes Reyes, Norm Davis, Claudette Peters, Lucinda Larson, just to mention a few.
On any given day Lesi can be found at Lambert Academy doing what she loves, teaching all aspects of cake design. She says her passion is teaching new cake designers the skills they need to start their own home based cake businesses.

Why Choose Lambert Academy
It all began with a guitar-shaped cake for one of our children, which planted the seed of belief in Lesi’s mind that she could be good at decorating cakes. With dreams of transitioning from her current job, Lesi started learning cake-making in our condo’s family kitchen. She initially took orders from family and friends, then referrals, until the time came to make the ultimate decision to leave the medical industry and become a professional cake designer.
Realizing the need for professional training to achieve her dreams, Lesi attended Bonnie Gordon’s cake school and never looked back. After a few years of honing her craft, Lesi felt the calling to teach once more, drawing upon her background as a fitness instructor with the YMCA. This led to the creation of skill-building classes at what is now known as Lambert Academy of Sugar Craft.
We constructed a commercial kitchen in our home, where we started teaching classes and making cakes for customers. After a few years, we recognized a gap in the market for a certification program – something Lesi wished she’d had to help build her skills and confidence at the beginning of her journey. Today, we offer a professional cake designer certification program attended by individuals from various parts of the world.
When COVID-19 struck, we faced extreme restrictions and had to choose between closing the business or expanding our space to accommodate enough students to survive. We now operate out of a 3,500-square-foot commercial location, complete with a spacious studio bakery and a separate large classroom. Our passion for teaching drives us, and we take immense pride in witnessing our students’ growth in their skills.
